In my copy (Redwall: 10th Anniversary Edition by Ace Books), the book has a total of 58 chapters. The book is divided into three seperate books:

Book 1 - 20 chapters/ 97 pages

Book 2 - 23 chapters/ 154 pages

Book 3 - 15 chapters/ 82 pages
