Control in science is something that can be used for comparison to determine the magnitude of an experimental effect. For example in a control group either nothing is done or a fake version of the experiment is performed to determine a "baseline". The results of the control experiment and the real experiment can be compared. This process helps eliminate the experimenter expectations effect, making the conclusions more objective.
Note: controls are rarely needed outside the field of Biology.
