When you get wire that is a shielded pair, you get two individual conductors that are each individually insulated from each other, and the pair is twisted and wrapped with a thin layer of foil to provide electromagnetic shielding to the pair. Occationally you'll see the pair is surrounded with a braided shield, but not commonly. That's your shielded pair.

You must use thermocouple wire (of the same type as the thermocouple) to extend the circuit. Use speaker wire that is shielded better and has a lower resitance.
Sorry, there is no "ground wire" for a microphone. Commercial microphones have shielded symmetric wiring. Cheers ebs

Don't run too much wire together in a bundle. You can also go with STP, which is Shielded Twisted Pair and that does not have much crosstalk. There are pipes you can buy where you run cable through them that are also suppose to help.
