The main difference is the type of tortilla used. Enchiladas are made with corn tortillas, filled with meat, and then covered with sauce. Burritos are made with flour tortillas, filled with a variety of meats and veggies (lettuce, onions, tomatoes, etc.) and rolled into an 'envelope' of sorts that can be held and eaten much like a 'wrap'. There are variations and combinations of these tortillas and ingredients that are usually referred to as 'Tex-Mex'.
A burrito has the ends folded up creating a pocket, unlike the wrap which has open ends like a taco. ( A burrito hold your food unlike a wrap which always has something falling out the end of it.)
If it has a shell, it isn't a taco. It's a tostada, no matter what Taco Bell says.
Tacos are different kinds of food served in a folded tortilla. The tortilla may be made of corn or wheat.
Burritos are foods, typically meats, cheeses, potatoes, etc., wrapped up in a tortilla (I've only seen wheat tortillas used, but I'm no expert).
Enchiladas are foods wrapped up in tortillas, covered in a sauce (and maybe cheese) and baked.
