According to the DeMauro Italian dictionary the correct spelling is caffellatte.

Despite an English-speaking culture misconception, a caffellatte (which they call latte or sometimes latté) is prepared adding steamed milk to an espresso (possibly "ristretto"), making sure that no froth is poured into the coffee. Therefore, the main differences with respect to a cappuccino are that the caffellatte contains more milk and no froth. This is also traditionally served in a tall glass with a steel handle.

An espresso is coffee made when hot water is forced under pressure through fine coffee grounds usually through an espresso machine.

Cappuccino refers to coffee consisting of 1/3rd espresso, 1/3rd milk and 1/3rd soft microfoam.

Latte - Full cream Milk

Skinny Latte - Low fat milk

A cafe latte contains espresso, milk and foam

Espresso - To preference (generally 30-60ml)

Milk - Almost to the top

Foam - about 1-2cms worth on top giving the latte a nice creamy texture

Personally I prefer a regular latte, simply because I dislike the texture of skim milk

Full cream milk (or even a good quality cafe-style soy milk) will deliver a lovely texture and makes drinking coffee that much more enjoyable
