"Fates" is the plural of "fate." You may be thinking of The Fates, who are a mythical trio of old women responsible for everyone's lives. One of them measures your life out, the other one weaves it into everyone else's lives, and the third cuts it at your death.

Fate is out of your control. Choice is what you do.

Fate is like rolling a dice and getting a 6. Choice is placing that dice so the 6 is facing up.
