hi :)

an emulsion liquid can be mixed and will stay together for a while ( mixed by shaking ) whereas immiscible will not mix together but instead form two separate layers like for example oil and water.

Two liquids are IMMISCIBLE if they don't mix. If you try to mix them, they soon separate out into two separate layers. Oil and water are immiscible (as are vinegar and olive oil in salad dressing).

The reason they don't mix is that they have very different molecular attractrive forces.

Some substances, called emulsifiers, have the two different types of molecular attractions in the same molecule. If you add an emulsifier to your immiscible liquids, the emulsifier molecules are attracted to both liquids and stop them separating. Such mixes are called emulsions.

Examples of emulsions are mayonaise (egg yolk protein is the emulsifier, olive oil and vinegar are the immiscible liquids), ketchup, gravy, ice cream.

One misleading name is Emulsion paint. This isn't a true emulsion as it is actually a mixture of a solid and a liquid. This type of mixture is correctly called a colloid.

an immisible mixture CANNOT be mixed while an emulsion cannot be mixed UNTIL an emulsifier such as egg yolk is added to it. The liquids will then mix and form an emulsion
