The classic kitchen brigade was large and detailed with a station for each part of preparation. This was necessary as there were no convenience foods and all items were created from scratch. The modern kitchen brigade is smaller with few stations needed.

The answer depends on how far back you want to go. In American colonies the houses didn't have kitchens, but had one room with a fireplace that was used for cooking and heat. Even further back in the Middle Ages castles did have a cooking area, but again a fireplace was used for cooking. A young boy would be put at the fireplace to turn the spit. They often died doing this job. The kitchen was prone to catching fire a lot so they usually were separate from the main house if it was wealthy enough. Over time how homes were built and designed changed from one great hall to a divided hall and the invention of the chimney allowed this to happen. The 18th and 19th centuries saw an influence of French style of cooking that had elaborate dishes, formal table settings, and strict etiquette. Americans and Asia brought new foods and demands to the kitchen. Servants were needed to not only cook, but to clean the huge amounts of dishes, gadgets, and ovens. Dinner parties could last hours because of the number of dishes served. Kitchens began to change with new inventions. The use coal, then gas, cast iron, electricity, and plumbed water. The industrial revolution added new inventions and new ways to look at the kitchen. Gas became the main source of heat which allowed ovens to become smaller and lighter. Upper and lower cabinets were introduced to the kitchen. In the 1920's the kitchen took one giant step with the creation of kitchen design making it smaller and putting all necessary items in the kitchen within arms reach. Jumping a few years we find the kitchen of the 1960's and 1970's changing because of an interest in home cooking and entertainment around the kitchen. By 1980 the trophy kitchen was born and today kitchens are being used for new ideas in food crafting, integrated appliances, and wireless technology. We are a long ways from the days of cooking over a fireplace.
