do a harmonic on the last fret which by last I mean closest to the neck pickup on the high E string

so if you got a 24 fret guitar your highest note would be a variation of E in standard E tuning. On a 21 or 22 fret guitar it wouldn't sound as great but it would be your highest note.

to do a harmonic lightly press your finger on the string and hit the string with your other hand , some people can do harmonics without moving their fingers off the strings how lightly they press but the second i hit the note i lift my finger off.

regardless of tuning its the last fret near the neck pickup on the highest string ... so on a bass lets say the 24th fret on your D string. Guitar your high E.

the tuning we use also affects this , a guitar in standard is high but high B tuning which not a lot of guitar string sizes can go up to will sound incredibly higher not even on the 24th fret. A capo is a worthy investment if you really want to see. without breaking any strings.

What does the loudness and the pitch of a guitar depend on?

Loudness for an acoustic guitar depends on how hard you pluck the string. Loudness for an electric guitar depends on how loud the speaker setting is. Pitch depends on which string you pluck, and which fret, if any, you are fingering. The tighter the string, the higher the pitch, in general. The shorter the section that is allowed to vibrate, the higher the pitch of that string.
