Greatest disadvantage of stainless steel is wide spread Iron deficiency anemia. Prior to the invention of stainless steel, people used to cook food in ordinary Iron pot, witch used to rust and daily this rust of Iron was consumed by people. Daily need of elemental Iron is very low. 3 mg/day and at the most 5 mg/day is sufficient to cure Iron deficiency anemia. So previously people almost never had Iron deficiency anemia, I guess. With the invention and widespread use of stainless steel, food became devoid of Iron and one has to take Iron supplement or most of the people suffer from Iron deficiency anemia.

tool steel is not very ductile so would therefore break easily and it isnt as effective as low carbon steel

Hardened steel breaks if forced to be bent. It is extremely brittle and stiff.

One advantage of hardened steel is that it is wear resistant.
