When a sunflower (Helianthus annuus) starts to bloom, there is a halo of color surrounding a lighter middle. The middle is made up of the florets which, if fertilized, will grow into seeds. A month after the flower opens, the petals will be droopy or gone, and the seed head will be bursting with ready-to-eat kernels.
