Cheddar cheese is the most popular cheese people use in macaroni and cheese. It is also popular for people to use a mixture of gruyere, cheddar and parmesan.
I would say cream cheese, which sounds obvious but its probably true. Marscapone and others are just as good.
I also think you spelled your question wrong, but I would have to say creamy and thick but lightly salted melted cheese for your platter of mac and cheese. :) It is what I suggest and what I often use as well; homemade is good, but so are store kinds!
Reheating boxed macaroni and cheese dries it out and turns it starchy unless milk and a little shredded cheese is added to revive the creaminess and flavor. Boxed mac and cheese does not have the creamy, melty cheese that a "made from scratch" mac and cheese has, so it does not reheat as well.
To increase flavor and add a richer taste.

Yes it can. A lot of people use water instead of milk but you can tell the difference because with milk, it comes out creamy. With water, it comes out regular with that flavor of cheese.
well some people think it is but it depends on your taste , i mean some people love mac 'n' cheese but then again some people dont. so you cant actually tell if mac 'n' cheese is the best dinner :)(L)
