There are two accepted forms for possessive singular nouns ending in s:

Add an apostrophe (') after the existing s at the end of the word: waitress'

Add an apostrophe s ('s) after the existing s at the end of the word: waitress's

Examples:

"The waitress' feet were killing her."

"The waitress's feet were killing her."

It is waitress's. All English nouns form the possessive singular by adding -'s. Singulars ending in a sibilant also sound gain a syllable thereby. Thus, fox's is pronounced foxes. Waitress's is pronounced waitresses. If, as some claim, waitress' were the correct spelling of a word pronounced waitresses, then boy' would also be the correct spelling of a word pronounced boys.
