A server as hardware is a computer specially set up to run a server program, which usually would have technologies that a user would not use all the time or at all, like ECC (error checking mechanisms to make sure data is valid), virtualization (run more servers on one single machine).
A service can be HTTP/Web Hosting (one example is this website you're on now - you're connecting to the servers that provides Web access), FTP (file transfer), and other kinds of things.

Most often they are used as a means of communication relay servers (information goes in, and the server responds with a request or by providing information). There are special servers which might act as load balancers for a parent server - by taking a majority of the incoming requests from the parent server and handling them on its own, the parent server (often the main server) can function normally and serve requests efficiently. Servers can also be used as a means to store information - it is not uncommon for a tech-savvy individual to host his or her own home server as an information hub for their work.
