sweat garlic and diced onion in butter till soft. add chopped par boiled potatoes and cook till softening. add leek and cook till a little softer. add stock and cook till potatoes are very soft. add the dark green leaves of the leeks for colour and cook for 2 minutes. blend.

Potatoes are, of course, one of the most familiar vegetables in the world, and have a rather bland but pleasant taste. Leeks are not as well known. For those of you who have not eaten them, they have a flavor that is remarkably similar to that of onion. I personally would describe it as superior to onion. So potato and leek is a very lovely flavor.
