Evidence does not have a plural form, as it is an uncountable noun. It is like information, or furniture, or even news, which, in spite of the final -s is always singular. So, you can have "a piece of evidence", or "pieces of evidence", but not "evidences".

No, the verb 'proves' and the verb 'proofs' have two different meanings.

The verb proves is the third person, singular, present of the verb to prove (proves, proving, proved, proven); to establish the truth or validity of by presentation of argument or evidence.

The verb proofs is the third person, singular, present of the verb to proof (proofs, proofing, proofed); to activate by mixing with water and sometimes sugar or milk (proof yeast); to make resistant to damage or failure (water proof); to check for errors (short for proofread).

The word proof is also a noun. The plural form for the noun proof is proofs. The noun proof is a word for information or evidence that shows that something is definitely true or definitely exists.
