Heat traveling through the air (or a liquid) to transfer to another (solid) material is called heating through convection. ;)
Foam can be a good insulator because it contains a lot of open gas spaces interrupted by fairly thin walls. The solid portions of the foam prevent much convection (air moving around carrying heat with it). Gas tends to be a lousy heat conductor, so all those air bubbles make the foam a poor conductor of heat - most of the conducted heat has to to travel through the limited solid structure of the foam (not much cross section for conduction).
