The Wintec saddles all come equipped with a medium gullet, you can then buy a kit containing the various sizes of changeable gullets or buy them individually. Wintec makes their own brand of gullet and they can also be used in Collegiate and Bates saddles with changeable gullets.
The Wintec 500 Jump Saddle is made out of Equileather.
I have a Winte 500 and it was a great investment there not overly exspensive, durable, you can adjust the gullet size. And my personal favorite attribute is that all you need is mild soap and water and sometimes just water for cleaning! I highly recommend any of the wintec products!

Crosby Saddles. I have just started jumping and am looking for a Crosby saddle. They are amazing! You may also want to look for a used saddle. Wintec is also a good brand to look at. They make good quality synthetic saddles. Synthetic means that they are made without leather, shortening the expected lifespan of the saddle, but making it cheaper and easier to care for. Most Wintec saddles also have an adjustable gullet system so you can change the saddle to fit the horse more easily. If you are going to be showing though, you should check if synthetic saddles are accepted in your area.

It depends on the brand you buy. If you buy a top quality stubben then it could be up to $4000 on just the saddle. but then if you buy a wintec it could be really cheap at around 300 dollars. it all depends on your level of riding and how much you are willing to spend. Ps another option is buying a used saddle. That is what i just did the original price new was 1700 dollars, but i got it for 628 and it has only been girthed once.
Various brands sell Wintec Saddles like Divoza and Digikey. Wintec Saddles are used for horse riding and are very expensive, ranging from 400 to 800 dollars.
As far as comfort and security go for the trail - I would definitely recommend Tucker Saddles. Can you be a bit more specific about harsh conditions? Do you mean a lot of hours spent on the trail or do you mean something else like for breaking out young horses or riding in rain/snow, etc. If weather is an issue I would recommend a synthetic saddle from Wintec or Fabtron.
