The metal must be cheap, and sufficiently malleable to be made into thin sheets. It should not contaminate the contents. It should either be resistant to corrosion, as is aluminium, or capable of being coated, as is steel. It needs to be strong enough to cope with being handled. Steel with a coating or aluminium are the ones we use most because of the economies of scale.
