Courgettes have no fat and no cholesterol. A 1 oz serving has 1 g fiber, 1 g protein 1 g sodium, 16% RDA vitamin C, 3% RDA vitamin A. They contain thiamine, riboflavin, niacin, potassium, phosphorus, manganese, magnesium, zinc, iron, copper and calcium. Most of the nutrients are in the skin. Yellow courgettes contain antioxidants such as lutein and carotenes. Dark green courgettes have more nutrients.
