A simple convergent boundary may, through folding, burial, and exhumation lead to metamorphic changes in the rock. (e.g. the Himalayas) But at the end of that metamorphosis, the rock type will not be hugely altered - a sediment may be turned into a schist, or a carbonate turned into a marble.

At a subducting boundary, (e.g the Andes, or New Zealand) the subducting material may be drawn sufficiently deep as to alter it by melting. Completely new rocks may be formed, and depending on the duration and grade of the cooling, a new assembly of minerals will be formed. Granite, would be an example of very slow cooling. Naturally the depth of burial is as important as is the temperature.
