72 is the is required if you have clients that like to be exact for font size, for example.

If my resolution is 100 than my 72 px text will change to 100 px text.

depends on what you are printing and what it is for but "resolutions" are used for digital purpose and not relevant with print.

Print uses inches like if you are printing a poster on a standard size sheet of paper then you would make the canvas 8.5" x 11".

There is one VERY important aspect of using Photoshop for print and that is the canvas DPI. Print projects should be set somewhere between 150DPI - 300DPI. This depends on the project's purpose but with print, larger the better.

Web/Digital = 72dpi

Print = 150dpi - 300dpi
