Jambalaya is a side dish. Set up a nice etoufffe, or grilled fish. Maybe some bite-sized deep fried alligator. NOT MORE RICE . Shrimp Creole. Or have it after as many good fresh shucked live oysters as your girlfriend thinks you can handle!
I am cooking cajun cabbage as a side dish with my jambalaya. Steam the cabbage add cajun seasoning, rotel, and ground beef!! This is my fist time putting them together but I think the outcome is going to be great!!

If i was cooking jambalaya i would use rocket leafs with chopped up spring onions in. Then i would place the jambalaya over the top of the salad and serve with red wine. Hope this helps

You can freeze Jambalaya. However, freezing will soften the rice, so it is recommended to undercook the rice a bit. Another method would be to cook everything but the rice, and freeze it. When you want to thaw it out and eat it, just cook some rice in a little stock and cajun spice and combine it with the jambalaya.
