A single phase motor does not actually require a capacitor. This device is only needed when a split phase motor is utilised. A split phase motor needs a device to regulate the power factor associated with the split phase.

A 3 phase motor should not usually have a run capacitor, It could have 3 phase correction capacitors to reduce the out of phase current draw from the supply but even this is not common except where very large currents are involved, or where the utility company is penalising a customer for phase correction.
The start and or run capacitors in a single phase motor are simulating an additional phase to make the motor start.
As the 3 phases are delayed and advanced from each other it is simple to pull the armature around with either the advanced or delayed phase.
Large 3 phase motors may start then run in several different configurations such as star and delta or may even use a pole combination to change from start to run.

The capacitor size for an AC motor is calculated base on the amount of current required to start the motor. A good rule of thumb is 50 to 100% of the total load.
