Because, Charles Wallace blocked IT out of his brain. Meg and Calvin blocked IT out as well but there were some holes. Not many, but enough to give them a "decent turkey dinner." Charles Wallace only tasted the bland taste of sand. He only could taste the food once IT could manipulate him.
