The 1981 Chevy Malibu 350 engine thermostat is located on the front of the engine. You can follow the water supply hose from the radiator to the thermostat.
That depends on the thermostat. If it's a 185 thermostat, the engine should run at 185. If it's running too hot, check the thermostat, radiator and water pump. If it's running too cold, replace the thermostat.

later model 350's run thermostats around 195 degrees, but older 350's didn't run that hot of a thermostat. I've seen them as low as 160 to 180 degrees on older 350's.
