Because the human body consists of water in solution, the water will not begin to freeze until it falls below the general freezing point (32 F, 0 C). The freezing point of meat is given as -15 C by the Food and Agriculture Organization of the United Nations, so it is reasonable to assume it is the same for human bodies as well.
