Assalaamu alaykum is a greeting and a good-bye
At departure they may say: Allah Hafiz (May Allah keep you in His protection).
The Muslims speak many languages. They may say good bye in their own language.
Regardless of the fact that there is no "Muslim language" per se, there are several Arabic phrases that are commonly used to say goodbye, regardless of whether the Muslim speaking them is an Arabic speaker.
If the conversation is between Muslims and non-Muslims:
Ma3a As-Salama (مع السلامة) = With peace (i.e. go with peace)
Ela Al-Leqaa2 (إلي اللقاء) = To the meeting (i.e. until we meet again)
As-Salaam Aleikum (السلام عليكم) & response Wa-Aleikum As-Salaam (وعليكم السلام) = Peace be upon you & response And upon you may there be peace.
If the conversation is strictly between Muslims:
Fi Amaan Illeh (في أمان الله) = In God's protection
Allah 3alik (الله عليك) = God on you (i.e. may God go with you)
Baarakat Allah Fik (بركات الله فيك) = God's blessings upon you
Sanuraa Inshallah (سنرى إن شاء الله) = We will see [each other] God-willing.

Just to add the above that Islam is a religion and not a language. Muslims are spread all over the world and they speak different languages per the countries of origin. However, some of them learn Arabic to practice praying and to recite the Quran in arabic.
