Glass is transparent so that its contents can be observed it also will have no effect on the quality and content/composition of the water. It is also very strong, relatively cheap and economical to use.
That depends on the size of tank you wish to build. Anything over 36inches x 18inches high/deep needs around 1/4inch at least.
