To be kosher, a fish must have fins and scales (Leviticus ch.11). So for example salmon has both and is kosher. Some eels, however, are not because while they have scales they have no fins. The sanitary reason is that fish without fins tend to be bottom dwellers and bottom dwellers, like lobsters, clams and oysters, tend to live in shallower waters and feed on anything they can find -- and in ancient times shallow waters was where human waste washed into the sea....Need I say more?

Fish is used the same way in a kosher meal as a non-kosher meal. The only limitations are that the fish being eaten must be of a kosher species and there is a tradition of not serving/eating fish and meat on the same plate.

Judaism requires that fish have both fins and scales. Some typical kosher fishes include: tuna, salmon, cod, scrod, halibut, arctic char, flounder, etc. Some typical non-kosher fishes include: eel, shark, catfish, marlin, etc. See also the attached Related link.

Additionally, any non-fish sea-creature is not kosher, such as: shrimp, lobster, langostine, sea cucumber, crayfish, mussels, clams, squid, octopus, etc.
