The reason the iceberg wasn't seen in time to turn was because there was no moon to reflect light off the berg and the ship was going too fast. It's debated that Smith ordered it to speed up under the direction of the ship's owner, but regardless, the ship was too large to turn in time anyway with such a small rudder. Also note that the lookouts did not have binoculars- a last minute crew change ended up causing them to leave port without the keys to the locker with the binoculars in them.
