Sheep farming during the 1800's compared to modern day is very different. In the 1800's, sheep were able to graze freely in open fields. Lack of space in modern day meant that sheep are grown in cramped, factory-like conditions.

No. Deer are not native to Australia. Deer were introduced into Australia for hunting and farming during the 1800s, and they have thrived in the absence of major predators. Feral deer are now quite a problem in Australia.
