The Independent/Manipulative variable is the variable that you purposely change, and the Dependent/Responsive variable is the variable that changes as a rest of the Independent variable. You measure the dependent variable to see the effects of the Independent variable.
Let us say that you would like to investigate the question of the effect of copper as a trace element on the growth of plants. Copper is then the variable because you vary the amount that is present in the soil of your test plants, while keeping everything else, such as the amount of water, the amount of nitrogen fertilizer, the amount of sunlight, etc., exactly the same. If you had more than one quantity that varied, you would then be unable to determine what the results of your experiment mean. For example, you have low copper and low nitrogen, and the plant does badly; was it the copper or the nitrogen which made the difference, or both? You wouldn't know. That's why you vary only one parameter at a time.
the variable that is observed and measured is the dependent variable, the one that is intentionally altered is the independent variable. An easy way to remember this is that the dependent variable depends on the independent variable.
