Well, honey, if the sun decided to take a three-day vacation, we'd be in for a chilly time. Without that fiery ball in the sky, temperatures would drop faster than your ex's phone number. Plants would struggle to photosynthesize, animals would be confused as heck, and we'd all be reaching for our snuggies and hot cocoa.

Nothing realy really. If it sped up it would spin faster and make shorter days and would revolve around the sun faster. If it slowed down it would spin slower making longer days and it would revolve around the sun slower.
What would happen to the earth if the sun's mass (and, thereby, its gravity) suddenly went to zero? The earth would continue moving in the direction it was going when the sun's gravity disappeared. It would depart the area on a tangent to its original orbit and head off into space. There would be dark days ahead.
