The national curriculum states what you need to know for your maths GCSE.
However, depending on your tier of entry you will not need to learn all of the syllabus.
For example, if you are only taking the foundation tier then you do not have to learn the higher level topics such as trigonometry and quadratic equations.
Some key topics, like circles, equations, Pythagoras, fractions, negative numbers etc. can appear on either tier. These are vital to learn if you are aiming for a grade C.
You are expected to know the contents of the syllabus and how to apply those contents.
This covers quite a lot and it would be onerous to list it all here!
Perhaps your teacher might be able to give you a copy of the current syllabus for your information.

It depends entirely on which GCSE you are taking. Like, for example, I know that Music GCSE is out of 80 and Maths is out of 200. It varies subject to subject.
