My baby mice started eating seeds and popcorn at 3 weeks old. When they start exploring and trying to eat food they can probably be separated from their mom as well.
they open their eyes around two weeks and start to eat solids soon after - so between 2 and 3 weeks. :D

Mice can not digest diary. Feeding a mouse cow milk can cause an imbalance in its digestive tract. If you need to hand feed a baby mouse, which is very hard to do, then you need to use milk replacement formula made for puppies.

Always start with baby food. Ask your baby's doctor before introducing any other foods.
Your best option is to leave it alone - it is rare for a single baby mouse to be left abandoned by the mother. If this is a pet mouse, ideally you would try to foster it onto another mouse mother for nurturing. If this isn't an option, you can try bottle feeding it with milk replacer (check with your veterinarian, you may have to use a non-rodent milk replacer if that's all that is available). The baby mouse will need to be kept warm and will need regular feeding and grooming (soft massaging of the abdomen to encourage regular bowel movements). The good news is a baby mouse will develop rapidly, so you should be mostly done with your intensive fostering work in a few weeks.
Once the baby mouse has opened its eyes, you can begin to introduce solid foods such as baby cereal (rice or oatmeal). Mix the dry cereal with whichever milk formula you have been using (goat milk, KMR, Esbilac). Add enough formula to the dry cereal so that it is a consistency that can still be fed through a syringe. You can mix a little bit of baby food in with the dry cereal as well, such as applesauce, to make the taste more appealing to your baby mouse. Gently squirt the cereal mixture out of the tip of the syringe just enough so that the cereal is peeking out of the hole. Hold the tip of the syringe with the glob of cereal in front of your baby mouse's mouth until he licks it off. You can also squirt a small glob onto the palm of your hand and allow your baby mouse to lick it up that way. Continue giving your baby mouse both cereal and formula at feeding time until he is 3-4 weeks, at which time he can be given regular solid mouse food and a water bottle.

I'm guessing, you mean oatmeal - rather than baby food oatmeal. The prepared instant oatmeal has high levels of sugar, a baby doesn't need.If you are using plain oatmeal and he has been eating normal baby food, just make the oatmeal "thinner" with water, formula or breast milk, less sticky than an adult eats.This is of course if the pediatrician or nutrition counselor has advised your baby is ready to eat solids.
