I just got nauseous from spoiled jerky two hours. It had a lighter brown color on the edges of the jerky than the rest of it. It was a month old.

∙ 9y agoBeef jerky is done when it is dry. If you make homemade beef jerky, you may want to leave a little moisture if you plan on eating it immediately. Otherwise, you want it to be totally dry.
