Convection in alike in both liquids and gases as, in both of them, the heated molecules being lighter rise upwards and the cooler molecules take their place.
Hot gases expand and therefore are less dense than cold gases, and therefore hot gas has buoyancy and will rise, much as air bubbles float to the surface in water.
The liquid with the higher density will stay down while the one with the lower density will rise up, thus stratifying the liquids into different layers.
