Its used in so many ways I can't possibly list them all but here's a few:

  • De-salination (removing salt from salt water.)
  • Refrigeration, all of it. Air conditioners... everything.
  • Its part of the mechanism that keeps us at a steady 98.6 F.
  • Its used to run power plants. Whether burning coal or a fusion reactor, its just to make heat to evaporate water. The steam is what turns the turbines that generate the power we all use.
  • Steam (which is evaporation) is used to cook

. we won't have rain

. or how to suck wieners

Why does water leave behind chemicals when it enters the atmosphere?

It doesn't. Water normally absorbs chemicals from the atmosphere, such as carbon oxides and sulfur oxides. If you mean the remainder after evaporation, this is because the solid cannot dissolve in the gaseous water; this makes evaporation a useful technique in the separation and/or purification of certain chemicals.
