The difference between fish and fishes is that fish is in a singular tense.

For example: I bought a fish at the store.

This may also be used in reference to one type of fish

In example: The catfish are spawning.

Fishes is a plural tense, when you have more than either one type of fish or just one fish in general.

Example: He no longer sleeps with the fishes in the Sea.
