evaporation is surface phenomenon, when water evaporates from surface of water it absorbs little heat from water thus evaporated water cools the water surface , this is evaporative cooling phenomenon. we know that more hotter is the air higher is its ability to carry moisture. the hot air around water carry more moisture from cooled surface of water (caused by evaporative cooling) hence air becoms cooler..
