If you put mentos in your mouth for a long enough time without chewing, yuou would soon find that the texture of the mentos changes to a slightly rough surface. The soft layer before that will dissolve in water, like in your mouth. When the mentos is put into the coke, the soft layer is dissolved off. The rough sorface of the mentos releases the carbon dioxide dissolved inside the coke (H2CO3), but the mentos is small, and can only hold a little ammount of the carbon dioxide. But once the carbon dioxide is released, this reaction cannot be reversed, all the excess carbon dioxide rushes out.
This set-up will work best on Diet Coke because it contains no sugar to act as impurities.

Nucleation is the onset of a phase transition in which gas or crystals is formed from a liquid. When soda is made in a factory, it is pumped with Carbon Dioxide Gas.
A mento candy may feel smooth to the touch but on it are little pits and each of these acts as a nucleation site. Other small items such as marbles or grapes will not work as well as mentos because they lack the pitted surface. So when a mento is released into a bottle, all the carbon particles are released from the liquid causing gas bubbles.
