Every living thing must take in substances which provide energy/nutrition. The unusable parts of the substances must then be excreted. In most species a crabs shell is not actually completely one whole, enclosed space. Just as with a turtle, many crabs have an opening in it's shell for this purpose. However, hermit crabs are not actually related to the crabs that most people think of. They are antropods. As the answer before this one (it was auto flagged for some reason) said, hermit crabs do use their claws to scoop out the excrement because their shells, while not their own originally, are completely one piece and a part of their abdomens and last 4 sets of legs are always inside the shell except when they are molting.
