We do not know for sure that Jesus was born in a stable, since this is not stated exactly, just strongly implied, due to the presence of a manger for animal feed. However, since a manger is off the ground normally, the presence of cattle is indicated or possibly horses (of some of the travelers who came to Bethlehem) or even goats (since they require shelter).
In many cases, sheep, horses/donkeys, cattle, and the like are depicted at the manger. Most of the details are actually not included. Sheep would be a possibility, from the shepherds, and donkeys may have been around (such as the one Mary and Joseph likely rode). Pigs would have been less likely, as they were considered to be unclean.
According to the classic creche scene, sheep, donkeys, and maybe cows were present at Jesus' birth. Unfortunately, the myths about the birth of Jesus (the birth in a stable, etc) have been proven to be simply stories. We do not know the immediate environment into which Jesus was born.
The Nativity stories in the Gospels of Sts. Matthew & Luke do not mention, however, most likely since shepherds came to see the Infant Christ, they probably brought some of their sheep with them.

As you will recall there was no room in the Inn for Mary and Joseph to lodge. Mary was very soon to have a baby. They either found a stable or some say a cave that was used as a stable for animals. There was nothing in this stable except some hay and a manger. A manger is a feeding trough for animals. So Jesus was laid in the manger (sort of like a crib.) Mary and Joseph probably slept on the floor.
