When group 1 elements react with water they give off hydrogen gas , the hydrogen gas burns with a coloured flame. In case of sodium, it burns with an orange flame.

In a vacuum the liquid would "boil" because of the water vapour coming out, and would probably freeze because of all the heat removed with it. Oxygen plays no role in this at all.
