You should use a thermometer where the average temperature you are measuring is somewhere near the middle of the range of your thermometer, and with the narrowest band possible that still keeps the limiting temperatures inside 10-90% of its range.

For example, if you are measuring something that is expected to be within 95-105 degrees, you should pick a thermometer that reads 94-106 degrees, or something close to that.

If you are cooking a turkey, this same 94-106 degree thermometer would be highly inaccurate.
