Sookie and Bill didn't break up, in fact they are technically engaged (they would have made it official but Bill was kidnapped). They haven't broken up YET permanently. If the show stays true to the books they should be over this season (3), and it will be when Sookie learns Bill was sent to Bon Temps by the Queen Sophie Ann for the distinct purpose of investigating Sookie. In the books, Bill and Sookie are permanantly broken up because Bill was unfaithful to Sookie by sleeping with Lorena his former lover, and maker.
