Primarily, the accounts of some of the parables and signs Jesus told/performed were recorded for all to read in the Gospels - Matthew, Mark, Luke and Joh.
The New Testament contains four separate stories of the life of Jesus, called the Gospels, written by the disciples Matthew, Mark, Luke, and John. Other accounts were thought to be blasphemous and not accepted into The Bible, and they were destroyed. The Dead Sea Scrolls survived by being hidden in a cave. The disciple Thomas also wrote a gospel which was not considered blasphemous, but neither was it considered good enough for inclusion in the New Testament.
Although all accounts of the life of Jesus are said to have been written by one or another of the disciples or early followers, not all such attributions can be taken at face value. The Biblical Gospels were believed to have reached their current form about 70 years after the events they describe, at which time most of the people involved would have been long dead. Although people often think of the stories as reminiscences (the attribution to disciples tends to suggest this) the stories were probably based on somebody else's written account of what somebody told them they heard someone say about what happened.
None of the non-Biblical Gospels were considered blasphemous, but some were considered heretical, including the Gospel of Thomas and the Gospel of Mary Magdelene. The Protevangelion of James was particularly well-thought-of by the Church. However, when the Bible was edited in the third century, Irenaeus the editor decided that there ought to be four gospels in the Bible because there were four cardinal directions, and so he picked the four most popular in circulation at that time.
