Probably Sir Percival.
This is the best answer I could find, since the ages of the knights are usually not specifically stated. But it also depends on what point in time you're referring to, since new knights were added as time went on while others, such as Tristram, died. At one point Sir Ector De Maris was the youngest (as stated in "The Champions of the Round Table"), but this was before Percival was knighted.
The concept of knights as a social class or military caste became less prominent as feudalism declined and centralized states became more common. The last knights were active in the late medieval period, up to the early modern era, around the 16th and 17th centuries. They were individuals who continued to adhere to chivalric ideals and codes of honor, but their roles and influence had significantly diminished by this time.
Answer:
No. Knights were (and are) by definition male. A knight's wife assumes the title of "lady". The female equivalent of a knighthood is a "dame".
Answer:
I am unaware of any female Knight of the Round Table, but there is no reason why one should not have existed. There was certainly a famous female knight in the Matter of France, named Bradamante; these works were contemporary with the medieval literature on the Round Table and dealt with Charlemagne and his people.
There is a link to a related question on female knights below, where the subject is dealt with in more detail.
There is also a link to an article on Bradamante.
There was no last knight at the end of the round table, because the table was round and there was no leader and everyone had a say.

Even now, in 2008, a few people are knighted in the U.K. If you mean 'knights in shining armour' it is not possible to give a precise date.

The only relation between the Knights Templar and the Knights of Columbus are that both organizations are/were approved by the Catholic church, members must be Catholic, and they both use the word Knight. There are no organizations that can legitimately claim the heritage through ancestry to the original order. The order was disband by the church. The Order of the Knights of Malta are the closest in relation and other organizations with the titles of the Knights Templar only do so out of honour and respect.
