depends upon which old man you are talking about. There is Gandalf, Saruman or even Bilbo Baggins.
If you say man, I guess you mean human... for that would be Saruman as he didn't die or atleast he didn't in the movies, if he did die than it would be either Gandalf or the "Lost his name" Brown (he's a fellow wizard of Gendalf. (he only appears in the book")
If you are looking for the average being in middle earth it either be a elf (Elrond, but this might not be as accurate... because there are many elder elfs that are not being named within the movie or book.
So the only way to really find out is to talk to the author himself which unfortunally you can't do it anymore because he died on 2 September 1973(1973-09-02) (aged 81).
If it a creature it probs be the Dragon or the Ent for they are from the first age of middle earth.
